Classic Blondies

As you guys know my sister welcomed a new baby into her family about two weeks ago. My mom has us all on “casserole patrol” and it was my turn to take them a meal this past weekend.   My sister has not been able to have Mexican during her pregnancy, which is one of her favorites. This made it easy to decide what to make them for dinner but it also made it a little tougher in trying to decide what to make her family for dessert.

We were on the phone talking about our plans when my nephew overheard us and wanted to tell me all about his baby brother. While I love my sisters dearly, I can definitely remember how much things changed when they came into the picture. It’s an adjustment for everyone in the house. The new baby has lots of dark hair like his dad but his big brother has lots of blonde hair like my sister. All it took was my nephew noting this simple fact aloud and I had the inspiration I needed for dessert. I decided to make the batch of classic blondies. My nephew was pleased as punch when he found out I made Blondies the color of his hair. Aunt CoCo is awesome!

I’ve never made Blondies before but the recipe is simple and easy. You probably have all that you need to make these in your pantry right now. Here’s what you need:

Preheat oven to 350 degrees. Grease a 13” x 9” baking pan. In a large bowl, sift together 2 cups of all-purpose flour, 2 teaspoons of baking powder and ¼ teaspoon salt. Set aside.

In a saucepan melt ½ cup of butter, remove from heat.

 Stir 2 cups packed brown sugar into butter.

Add in 2 eggs and

1teaspoon vanilla. Stir until combined.

Stir dry ingredients and 1 cup of walnuts into the sugar mixture.

Spread into prepared baking pan and bake 20-25 minutes.

Cut into bars while warm.

Serve it up.

It’s been a busy week filled with spring housecleaning, restocking the booth and adding a little bit of spring around the house. I hope you guys have a wonderful week filled with rest and relaxation.

    1. Yeah my hand was hurting a little bit from patting myself on the back for that one ha ha 🙂 Seriously, he is a really sweet little boy and I think he’s going to make an awesome big brother.
