Delicious Open-Faced Breakfast Sandwich

Are you guys looking forward to the weekend? Me too! I am currently on a birthday adventure with my mom which is exciting. She is always fun to be around and I love being able to spend some one on one time with her whenever I can.

Breakfast is definitely one of our favorite meals so we’re always looking for an easy, healthy way to start the day. This delicious open-faced breakfast sandwich is super simple to make. It has several layers so we usually save this treat for the weekend when we can linger over a hot cup of coffee or a glass of fresh Florida orange juice.

This breakfast sandwich is hearty enough to keep you satisfied until lunch and is the perfect way to surprise someone with breakfast in bed. Here’s a look at how to create this delicious open-faced breakfast sandwich…

First, toast a slice of sourdough bread. This is really important because there will be multiple layers of veggies and an avocado spread on top of the bread and you don’t want your open-faced breakfast sandwich to get soggy. You’ll also need to use caution and care to hard boil and egg.

While the bread is toasting, using caution and care thinly slice enough cucumbers, tomatoes and hard boiled eggs to cover your slice of bread.

Next, place half of an avocado, a pinch of salt, pepper, garlic powder and a squeeze of lime juice in a small bowl.

Mash ingredients together with a fork.

Spread avocado mixture onto your piece of toasted sourdough bread.

Next pile arugula on top of the avocado mixture.

Then layer your cucumber slices,

your hard boiled egg slices,

and your tomato slices,

Finally, top with a pinch of salt and pepper and

crumpled feta.

Serve with your favorite breakfast side like bacon, fruit or hashbrown casserole. This delicious open-faced breakfast sandwich is so good!
