Strawberry Almond Scone Recipe

Today, we’re sharing a strawberry almond scone recipe that is so simple to make they’re perfect for a lazy weekend, a Sunday brunch or a special celebration like Valentine’s Day.

Lazy weekends are hands down our favorite way to spend a weekend and we know so many of you feel the same way too.  While they’re not as frequent as we would all like due to busy schedules, work obligations and family commitments, it feels like the biggest indulgence when we’re able to take full advantage of a lazy weekend.

For the past year, we’ve been keeping Sunday’s sacred and I can’t even tell you how much of a difference it makes in the way our week runs.  Sometimes we have to really fight for Sundays which means planning in advance, turning down Sunday afternoon events, or arriving home early from a trip in order to carve out a sacred Sunday.  It’s always worth it in the end though because we feel relaxed, refreshed and ready to face the week.

More times than not, we kick off the weekend on Thursday by making sure the house has been picked up, the pantry and the refrigerator have been full stocked with easy meal ingredients for the week, and we understand our schedules completely.

It does take a bit of extra work Monday thru Wednesday in order to make it happen. By starting our weekends on Thursday though, we’re able to snuggle in for a movie and pizza on Friday, complete DIY projects or meet up with friends and family for fun adventures on Saturday while still keeping Sundays sacred.

It honestly, feels like a three-day weekend whenever we’re able to pull it off!

Part of what makes weekends like this work, is having quick and easy meals to make, including breakfast. These strawberry almond scones don’t take very long to make at all yet they’re festive enough to add a little bit of fancy to any weekend, lazy or not.

Here’s a look at how you can make these strawberry almond scones too…

Strawberry Almond Scone Recipe Ingredients:

2 cups all purpose flour

¼ cup granulated sugar

2 teaspoons baking powder

½ teaspoon salt

6 tablespoons butter, cold

1 cup heavy whipping cream, cold

½ teaspoon almond extract

1 – 1 ¼ cup cut and sliced strawberries, cold

Strawberry Almond Scone Glaze Recipe Ingredients:

1 cup Powdered sugar

5 tablespoons Heavy whipping cream

½ teaspoon Almond extract

Strawberry Almond Scone Recipe Steps:

Step 1:Preheat oven to 350 degrees F and spray heart shaped baking pan with non-stick baking spray.

Step 2:Whisk or pulse together all dry ingredients into medium size bowl, food processor, or pastry blender until combined.

Step 3:Quickly cut in the butter until mixture resembles coarse meal.

Step 4:Pour heavy whipping cream and almond extract over the mixture until a dough begins to form. Do not over mix.

Step 5:Fold strawberries into the mixture.

Step 6:Transfer dough mixture into heart shaped baking pan. We made 6 large scones.

Step 7:Bake scones 15-18 minutes or until scones are light brown.

Step 8:Place scones on a wire baking rack and allow to cool.

Step 9:While the strawberry almond scones are cooling, make the glaze by whisking the ingredients together in a small bowl.

Step 10:Drizzle or pipe the glaze over the strawberry almond scones.

Step 11:Serve scones topped with almond slices or strawberries, if desired and enjoy.

These strawberry almond scones will keep up to 2 days in an airtight container which makes them a super easy breakfast option for lazy weekends, brunch on Sundays or fun holidays like Valentine’s Day!

We like to eat these scones warm, with coffee and on vintage china. It’s such a simple way to dress up breakfast on the weekends and doesn’t take any extra time at all, you know?
